Our Story

A French baker's craft, five minutes from home.

Éclair was founded by a French baker at 275 Hampton Street in 2012. In 2023, Stéphane and Patricia Bordes took it on from him — and set about making sure it stayed exactly what the street already loved about it.

Stéphane trained in Aix-en-Provence and worked for ten years as a baker and pastry chef in the south of France before moving to Australia, where he went on to teach pastry at Melbourne's William Angliss Institute and to work as a pastry chef at Brunetti. Patricia runs the front of house. They live in Black Rock, a few minutes down the bay, which means the bread on Hampton Street is made by people who shop on it too.

Coming up on fifteen years since the first loaf came out of that oven, everything is still made by hand in the bakery behind the counter: starting well before the sun is up, seven mornings a week.

Alongside them, a café team drawn almost entirely from the local area — students, neighbours, and people who were customers first.

The Bakery

The day starts long before you do.

By the time the doors open at 6am, the ovens have been running for hours. Dough shaped the night before has had its long, slow, cold ferment. The croissants have been folded, rested, folded again.

It is a slower way to run a bakery, and a harder one. It is also the only way to get bread that tastes like this.

Is there a cut-off for ordering?

Not for most things — order the night before or on the walk down. Pastries are the exception and need 24 hours.

Do you make birthday or wedding cakes?

No. We are a boulangerie and pâtisserie, so the cakes are the ones in the case — plus our gift boxes and seasonal ranges.

Where do I find allergen information?

It is listed against each item in the online store. If anything is unclear, ring us before you order and we will talk it through.

The Chatty Table

Every Monday morning Patricia sets aside a table for anyone who would like a bit of company over coffee, as part of the Chatty Café Scheme. No booking, no cost, no need to know anybody. Pull up a chair, bring the dog, and stay a while.

The Hampton gym group come in after training, and the cycling groups pull up out the front most weekends — for the coffee as much as the pastries. If your group wants a regular spot, tell Patricia and she will keep a table.
